Tips for Single Parents Surviving the Summer
- Plan in advance. You cannot let Summer sneak up on you.
- Lean on your support community.
- Find other moms to partner with and share responsibilities with.
- Look at all of the things available for them to be a part of.
- Schedule time for you to “vacation” with them, even if it’s a staycation.

Amy Fenton’s Cream of Taco Soup
Number of Servings: 8 – 10
Preparation Time: 4-6 hours
Ingredients:
1 lb of browned ground beef
1 half-pint of whipping cream (yes, I did say whipping cream)
1 lb Velveeta (I use the mild Mexican) – cube and melt in the microwave
2 cans of chili (no beans)
2 can of chili hot beans (found in the bean section, not the chili section)
1 can of Rotel
Instructions:
Put all ingredients in the Crock-Pot on medium heat for a few hours or low heat if cooking all day, allowing the cream to heat and thicken the mixture. Stir occasionally.
Place in a bowl and put chili cheese Fritos on top. You can top with sour cream, shredded cheese, pico, lettuce, etc . . .
It is even better reheated and it is a Halloween favorite at our house. Makes enough to share with all the neighbors.
